Roasted Banana Chocolate Chip Ice Cream

Ingredients

ripe bananas cut into 1/2 inch slices

tbsp unsalted butter, melted
1/2
cup plus 2 tablespoons brown sugar divided
1 1/2
cups whole milk
1/2
cup heavy cream
1/4
tsp salt
1
tsp vanilla paste (or extract)
6
oz semi sweet chocolate, chopped
1
tbsp Bourbon(optional)
Directions
1.
Preheat oven to 400 degrees

In medium baking dish toss the bananas, butter and 1/2 cup brown sugar. Bake for about 40 minutes or until soft and caramelized
3.
Pour the bananas and gathered syrup into blender. Add milk, cream, salt and vanilla. puree until very smooth
4.
Cover and chill for at least 8 hours. Pour into ice cream maker and freeze according to the manufactures directions. During the last minutes of churning sprinkle in the chocolate chips and bourbon (optional).
5.
Transfer to an airtight container, press plastic wrap against the ice cream, and freeze until firm, at least 2 hours. The flavor will ripen the longer the ice cream freezes.
