Chunky Vegetarian Chili

Doesn't get much easier than this - some simple ingredients, 1 pot, and 30 minutes. Serve with Trader Joe's corn bread, yum!

Ingredients

tbsp vegetable oil

cups chopped onion

cup chopped yellow bell pepper
1/2
cup chopped green bell pepper
2
garlic cloves, minced
1
tbsp brown sugar
1 1/2
tbsp chili powder
1
tsp ground cumin
1
tsp dried oregano
1/2
tsp salt
1/2
tsp black pepper
2
(16 oz) stewed tomatoes, undrained
2
(15 oz) black beans, rinsed and drained
1
(15 oz) kidney beans, rinsed and drained
1
(15 oz) pinto beans, rinsed and drained
Directions
1.
Heat the oil in a Dutch oven over medium-high heat.
2.
Add onion, bell peppers, and garlic; sauté 5 minutes or until tender.
3.
Add sugar and remaining ingredients, and bring to a boil.
4.
Reduce heat, and simmer 30 minutes.
