Fresh Corn Souffle

Good for Thanksgiving!

Ingredients

ears fresh corn

tbsp butter
1
tsp flour
1/2
tsp salt
pinch pepper
1 3/4
cups whole milk
2
large eggs
1
cup crushed crackers
1/2
cup chopped onion
Directions
1.
Cook corn for approximately 10 minutes; allow to cool. Cut corn from cob and reserve 5 cups.
2.
Butter an 8 x 8 glass pan.
3.
Melt 1 Tbsp. butter on medium heat in heavy pan. Add flour, salt, and pepper. Stir for two minutes (do not brown).
4.
Gradually add ¾ cups milk, stirring constantly. Bring to boil.
5.
Add 2 cups corn.
6.
In large bowl, whisk eggs with 1 cup milk. Add crackers and corn mixture.
7.
Add 3 cups corn and onion, Pour mix into buttered pan; refrigerate until ready to bake –or-

Melt 3 Tbsp. butter. Remove from heat and add 1/3 cup crackers (with g salt) and toss to coat. Sprinkle on top of corn mixture.
9.
Bake approximately 40 minutes until knife in center comes out clean.
10.
Serve immediately.
