Boiled Raisin Cake

One of my favourite cakes when it is hot out of the oven! Great with icing or ice cream, or both!

Ingredients
1
cup raisins
3/4
cup white sugar
3/4
cup brown sugar
1/4
tsp salt
1
tsp cinnamon
1/2
tsp cloves
1
tsp allspice
1/2
tsp nutmeg
2
tbsp (heaping) margarine (up to 1/2 cup
2
cups water
2
tsp baking soda
2 3/4
cups flour
Directions
1.
Bring first 10 ingredients to a boil in a pot.
2.
Boil for approximately 3 minutes.
3.
Let cool.
4.
When lukewarm add baking soda.
5.
When COLD add flour and mix.
6.
Bake at 350 degrees Fahrenheit for about 45 minutes.
7.
(Be aware that if it is in a glass pan it will need less baking time than this as glass bakes faster.)
