Creamy Rice Pudding

My favorite rice pudding recipe from Moosewood Cookbook by Molly Katzen

Ingredients
2
cups cooked rice
2
eggs
1
cup milk
1/3
cup honey
1
tsp vanilla
1/2
tsp salt
handful of raisins or chopped dates
1/2
tsp cinnamon
dash or 2 of nutmeg
2
tsp fresh lemon juice
1
cup of one of the following: yogurt, sour cream or whipped cream
Optional: 1 cup grated apple, 1 cup fresh peach slices, 1/2 cup chopped nuts
Directions
1.
Beat eggs, milk and honey together in a blender. Combine with cooked rice and remaining ingredients, except yogurt, sour cream or whipped cream. Spread into a buttered 8" square pan (or it's equivalent) and bake at 350 degrees. Stir well every 8-10 minutes during baking. Remove from oven after 25 minutes. It'll still be loose but will solidify as it cools. After it has cooled 10 minutes, stir in yogurt, sour or whipped cream. Eat hot, warm or cold.
