Chicken And Rice Casserole.

Chicken and rice casseroles are a staple of American cooking.

Ingredients

lb (900 gr) - chicken pieces

tbsp - vegetable oil

tbsp - water
1
large (6 oz / 180 g) - onion sliced
2
cloves - garlic finely chopped
4
oz (120 gr) - small sausages cut into 1/4 inch (1/2 cm) slices

/4 cups - long-grain rice
1
medium (4 oz / 120 g) - green pepper de-seeded and chopped
1
medium (4 oz / 120 g) - red pepper de-seeded and chopped
1
tbsp - curry powder

tsp - salt

/4 cups - chicken stock fat removed
Directions
1.
Recipe can be reduced to one-third by reducing all ingredients proportionately.
2.
Group chicken into 2 batches. Heat oil in cooker for about 2 minutes. Brown and remove each batch onto paper towels to drain off excess oil.
3.
Away from heat, sprinkle water in cooker. Stir to remove any frying residues attached to base.
4.
Return cooker to heat. Add onion, garlic and sausages. Stir fry till onion is transparent. Add rice and fry till rice turns opaque (approximately 3 minutes).
5.
Remove cooker from heat. Add chicken and remaining ingredients. Stir.
6.
Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 6 minutes.
7.
Remove cooker from heat. Allow to cool naturally for 5 minutes. Press finger-tip control/lift vent weight lightly to release pressure.
8.
Open cooker. Serve hot.
