Chili Con Carne.

Chili con carne, more commonly known in American English as simply “chili”, is a spicy stew containing chili peppers, meat, tomatoes and often beans.

Ingredients

/4 lb (1 kg) - lean ground beef
1/2
cup - olive oil

large (1 lb / 450 g) - onions chopped

cloves - garlic finely chopped

/2 cups - kidney beans soaked overnight or in hot water for 2 hours and drained

large (2 lb / 900 g) - tomatoes peeled and chopped/or 3 cups canned tomatoes drained and chopped

- bay leaves

tbsp - salt

tbsp - tomato paste

tbsp - chilli powder

tsp - pepper
1/4
tsp - dried basil leaves
2
tsp - cumin seeds ground
2
cups - water
Directions
1.
Recipe can be reduced to one-third by reducing all ingredients proportionately.

Divide meat into 2 batches. Heat 2 tbsp oil in cooker for about 2 minutes. Brown and remove first batch. Add another 2 tbsp oil to cooker. Brown and remove second batch.
3.
Add remaining oil (4 tbsp) to cooker. Add onions and garlic. Stir fry till onions are light brown. Add meat and remaining ingredients. Stir.
4.
Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 18 minutes.
5.
Remove cooker from heat. Allow to cool naturally.
6.
Open cooker. Discard bay leaves. Serve hot.
