Lamb Curry.

Simple, yet delicious, Lamb Curry is also easy to put together.

Ingredients

/4 lb (1.7 kg) - boneless lamb shoulder and neck cut into 11/2 inch (4 cm) pieces

tbsp - vegetable oil
11
/4 cups + 2 tbsp - water

large (1/2 lb / 225 g) - onion chopped

cloves - garlic crushed

tsp - salt

tsp - pepper

tsp - curry powder
1/2
cup - celery chopped
1/4
cup - parsley chopped

tbsp - flour
3/4
cup - yogurt
Directions
1.
Recipe can be reduced to one-half by reducing all ingredients proportionately.

Divide meat into 2 batches. Heat oil in cooker for about 1 minute. Brown each batch on all sides and remove.
3.
Away from heat sprinkle 2 tbsp water in cooker. Stir to remove any frying residues attached to base.

Return cooker to heat. Add meat, 1 cup water and remaining ingredients except flour and yogurt. Mix well.
5.
Close cooker. Bring to full Pressure on high heat. Reduce heat and cook for 10 minutes.

Remove cooker from heat. Allow to cool naturally.

Open cooker. Drain off fat.

In a separate bowl, gradually add remaining water (¼ cup) to flour blending until smooth. Push food to one side of cooker. Into the liquid, gradually add flour mixture stirring constantly with a wire whisk. Place cooker on medium heat and cook until sauce thickens (approximately 3 minutes), stirring constantly. Remove cooker from heat. Add yogurt. Stir. Serve hot.
