Lamb Roast.

This Roast Leg of Lamb recipe is the classic Spring Sunday lunch and is perfect for Easter.

Ingredients

cloves - garlic sliced

/4 lb (11/4 kg) - leg of lamb

tbsp - vegetable oil
1
tbsp - soy sauce
1/3
cup - water
1/2
tsp - salt
1/4
tsp - pepper
1/2
tsp - dried rosemary leaves
Directions
1.
To cook reduced quantities : do not reduce water at all.
2.
Place garlic in natural seams of meat.
3.
Heat oil in cooker for about 2 minutes. Add meat and brown evenly on all sides. Add soy sauce and water. Turn meat in liquid. Sprinkle salt, pepper and rosemary over meat.
4.
Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 28 minutes.
5.
Remove cooker from heat. Allow to cool naturally.
6.
Open cooker. Place meat on serving dish.
7.
Return cooker to medium heat and boil till liquid is reduced to half, stirring occasionally. Serve lamb hot, accompanied with sauce.
