Saag Gosht.

Saag Gosht is a delicious mutton/lamb and spinach curry from the northwest region of India.

Ingredients
1/2
cup - butter or vegetable oil

tsp - mustard seeds
8
flakes - garlic chopped
1 1/4
kg - mutton leg cut into 4 cm pieces can me relplaced with lamb

medium (200 g) - onions chopped

gr - ginger chopped

- green chillies chopped
1/2
tsp - turmeric powder
1
tbsp - coriander powder

tbsp - red chilli powder
4
tsp - salt
1
tsp - sugar
1/2
cup - curd beaten
12
cups - spinach trimmed and finely chopped
1/4
cup - water
Directions
1.
Melt butter in cooker. Add mustard seeds. When crackling, add garlic and meat. Stir fry till meat is browned.
2.
Add all other ingredients except spinach and water. Stir fry for about 3 minutes.

Add spinach. Mix, pressing down spinach. Add water.
4.
Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 12 minutes.
5.
Remove cooker from heat. Allow to cool naturally.
6.
Open cooker. Place cooker on high heat. Cook till liquid dries up and butter shows separately (approximately 10 minutes), stirring occasionally. Serve hot.
