Spicy Lamb Roast .

A flavorful spiced roast, leg of lamb recipe.

Ingredients
1
inch (2.5 cm) piece - fresh ginger
12
cloves - garlic
2
lb (900 gr) - leg of lamb
1
tbsp - ketchup
1
tbsp - Worcestershire sauce
1/4
tsp - pepper
1
tbsp - soy sauce
2
tsp - salt
1/4
cup - vegetable oil
1
- bay leaf
1/2
cup - water
Directions
1.
To cook reduced quantities : do not reduce water at all.
2.
Grind ginger and garlic into a paste.
3.
Prick meat all over with a fork. In a large bowl, mix ginger-garlic paste and all other ingredients except oil, bay leaf and water. Rub meat with mixture. Allow to marinate overnight in the refrigerator or for at least 4 hours turning it once.
4.
Remove meat. Reserve marinade.
5.
Heat oil in cooker for about 2 minutes. Add bay leaf and meat, brown evenly on all sides. Away from heat, add water and marinade. Stir.
6.
Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 30 minutes.
7.
Remove cooker from heat. Allow to cool naturally.
8.
Open cooker. Place meat on serving dish.
9.
Place cooker on high heat and boil till liquid is reduced to half, stirring occasionally. Serve lamb hot, accompanied with gravy.
