Chingri Macher Malai Curry.

Prawns in Coconut Milk. Chingri macher malai curry is a world famous Bengali cusine. In fact in many places it is considered as a symbol of Bengal.

Ingredients

cups - coconut grated

cup - water

gr - ginger

flakes - garlic

cup - mustard oil

medium (350 g) - onions chopped
1 1/4
tsp - turmeric powder
2 1/2
tsp - red chilli powder
1 1/2
tsp - garam masala powder
1 1/4
kg - prawns shelled, de-veined and wiped dry

tsp - salt

tsp - sugar
Directions
1.
Extract 1 cup milk from coconut using 1 cup water.

Grind ginger and garlic into a paste.
3.
Heat oil in cooker for about 5 minutes. Add onions and fry till golden brown. Add ground paste, turmeric, chilli and garam masala powders. Stir for a few seconds. Add prawns. Stir fry for about 1 minute. Add coconut milk, salt and sugar. Stir till sugar is dissolved.
4.
Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 3 minutes.
5.
Remove cooker from heat. Press finger-tip control/lift vent weight lightly to release pressure.
6.
Open cooker. Serve hot.
