Chicken And Artichokes

This is a delicious, easy recipe that I got from Aunt Laura.

Ingredients

boneless chicken breasts
small jar of roasted red peppers: diced
large jar of marinated artichoke hearts: diced
1/2
stick of butter, softened
italian bread crumbs
8
oz monterey jack cheese, 8 oz shredded
parmesan cheese
1
clove Garlic: minced
Vegetable oil
Directions

Preheat oven to 350 degrees

Pour enough vegetable oil into a 13 x 9 baking dish to cover bottom
3.
Prepare the chicken

Trim the chicken breasts and pound them to 1/2 thickness

Place chicken breasts into dish

Topping:

In a bowl, place the softened butter, Italian bread crumbs, grated Parmesan cheese, and minced garlic. Mix until crumbly . Sprinkle crumb topping onto chicken breasts. Continue with the chopped roasted reds and artichoke hearts
8.
Cook uncovered until chicken is cooked through. Sprinkle with the Monterey Jack Cheese during the last 10 minutes
