Hearty Turkey Chili

Ingredients
cooking spray

tsp olive oil

large onion chopped (i use spanish or yellow

cloves of garlic, minced

lb of ground turkey (I sometimes will do 2 because I add extra veggies

carrots sliced (i’ll sometimes buy the pre sliced and use majority of the bag
2
tbsp of chili poweder
1
tbsp of paprika
1 1/2
tsp red pepper flakes
1
tsp of cumin (I add extra
2
medium fresh tomatoes chopped (i do a big container of cherry tomatoes halved
recipe doesn’t call for celery, but i’ll add it if we have it
1
cup canned tomato sauce
1
cup of chicken broth or can
1 1/2
tbsp apple cider vinegar
can of kidney beans, rinsed and drained
1
green pepper, chopped
salt/pepper to taste
scallions chopped, cheese, sour cream for toppings
Directions
1.
Coat large pot with cooking spray, add oil, onions, and garlic over medium heat. Cook until onions/garlic soften and add carrots, cook for 5 minutes. (I sometimes cook turkey separately but you can add to the mixture). Add turkey and cook through.

Add chili powder, paprika, red pepper flakes, cumin, tomatoes, celery, s/p, broth, vinegar, tomato sauce, beans, and green pepper (everything else). Reduce heat and let simmer for at least 45 min-hour.
3.
Add toppings/I’ll sometimes make some elbow noodles too.
