Rhubarb + Raspberry Lemonade

Avi's perfect pink drink. Substitute raspberries for strawberries to change it up!

Ingredients

Rhubarb stalks, chopped
1
pt Raspberries, roughly chopped
1
cup Sugar [plus 1/2 cup if needed]
4
large Lemons, juiced [about 1 cup]

Mint Leaves
Directions
1.
Add rhubarb, raspberries and water to large pot. Bring to a boil, stirring occasionally. Remove from heat and let steep for 30 minutes, uncovered.
2.
Using a fine mesh sieve, strain over large bowl, separating juice from fruit. Discard rhubarb and raspberries.
3.
Let juice cool for 30 minutes.
4.
Combine rhubarb juice with lemon juice in a pitcher. Add mint leaves.
5.
Refrigerate until cool, about 1 hour.
6.
Serve chilled, with or without vodka.
