Chicken Divan

Ingredients
1
pkg frozen or 1 large bunch of broccoli
1
lg pkg of fresh chicken breasts or 1 lg pkg frozen diced chicken (tyson)

cans cream of chicken soup
1/2
cup mayonnaise
1/2
tsp curry powder
1
tsp lemon juice
1/2
cup of bread crumbs
1/2
cup of shredded sharp cheddar cheese
rice – uncle bens converted or minute rice
Directions
1.
Prepare rice as directed on package. About 4-6 servings

Steam broccoli
3.
Cook chicken and slice into thin strips or cubes. If using the pre-cooked chicken cubes, heat in skillet with olive oil.

Spray 13x9 dish with non-stick cooking spray
5.
Spread prepared rice evenly on bottom of dish
6.
Spread cooked broccoli evenly on top of rice
7.
Spread cooked chicken evenly on top of broccoli
8.
Combine mayonnaise, lemon juice, curry powder and cream of chicken soup. Add more curry powder and lemon juice to taste, if desired.

Spread chicken soup mixture evenly over top of chicken
10.
Sprinkle shredded cheddar cheese evenly over top of soup mixture
11.
Spread bread crumbs over cheese and top with a couple of small pats of butter
12.
Cover loosely with foil and bake at 350* for 30 minutes
13.
Remove foil and bake for another 5-10 minutes.
14.
Serve with warm rolls. Enjoy!
