Sausage And Cheese Dip

Ingredients

lb hot Italian sausage (bulk or out of casing)
1
cup chopped onion
1/3
cup chopped green pepper
1
clove garlic, minced
1
can (16 oz) stewed tomatoes
1
cup tomato juice
1
can (4 oz) mushrooms, drained and chopped
2
cubes or 2 tsp. beef bouillon
1/2
tsp Italian seasoning
3/4
cup grated Parmesan or Romano cheese
Directions

Brown sausage in heavy skillet, drain. Add onion, green pepper, and garlic. Cook until tender. Add tomatoes, tomato juice, mushrooms, bouillon, and seasoning; mix well. Simmer, uncovered, 1 hour. Stir in cheese; heat through. Serve with king size corn chips.

Note: Can be made ahead and put into casserole dish. Then heat in oven at 350 until warm, when ready to serve. Recipe also doubles well.
