Pumpkin Pie Custard

This taste like Pumpkin pie but without the crust. We started enjoying this with Mike & Lisa at Thanksgiving and now it has become a favorite.

Ingredients
1/2
cup sugar
1
tsp cinnamon
1/2
tsp salt
1/4
tsp ground ginger
1/4
tsp ground cloves
2
large eggs
1
can (15 oz) 100% pure pumpkin
1
can (12 oz) evaporated nonfat mile (or evap 2 percent milk)
Directions

Mix sugar, cinnamon, salt, ginger and cloves in a small bowl. Beat the eggs in a large bowl. Stir in the pumpkin and the sugar-spice mixture.

Gradually stir in the evaporated milk. Pour into ramekins, and bake in a preheated 350-degree oven for about 40 minutes. Don’t overbake; the center should be slightly wiggly. Cool and enjoy at room temperature or refrigerate for later use. Can serve with whipped cream.
