Red Wine Poached Pears

We are not big dessert fans but this dessert is tasty and finishes off a nice meal with a bit of a wow factor. *Poached pears can be made 1 day ahead and chilled. Bring to room temperature before serving.

Ingredients

cups dry red wine
1/2
cup orange juice

tsp grated orange peel

tbsp sugar

tsp fresh lemon juice
1
(2-inch) cinnamon stick
1
bay leaf

whole cloves

small firm-ripe pears (3/4 to 1 pound total), such as Forelle, peeled, halved lengthwise, and cored (short cut is to use trader joes pears in jar)
Directions
1.
Combine first 87 ingredients in heavy large saucepan. Stir over medium heat until sugar dissolves and mixture comes to simmer.

Add pears and return mixture to simmer. Reduce heat and simmer slowly until pears are tender when pierced with knife, about 20 minutes. Transfer pears to plate.

Boil liquid in saucepan until reduced to half, about 20 minutes. (Can be made 1 day ahead. Cover and chill pears in poaching liquid. Before serving, rewarm over medium-low heat until pears are heated through.). Discard cinnamon stick and bay leaves and pour syrup over pears. Cool completely in syrup, about 30 minutes.
4.
Garnish with orange peel strips, if desired, and serve.
