Prosciutto Avocado Roll Ups

Perfect for hand-passed appetizers or to serve as a starter course at dinner party. These tasty morsels were gone in minutes. The creaminess of the avocado pairs wonderfully with the salty prosciutto. Don’t skip the dressing, it makes the dish.

Ingredients

tbsp olive oil
4
tsp lemon juice
1
fresh garlic clove, minced, to taste
1
tsp dried oregano
1
⁄8 teaspoon fresh coarse ground black pepper, to taste

avocados
3
oz very thinly sliced prosciutto, cut into 16 strips
Directions
1.
Combine oil, lemon juice, garlic, oregano, and pepper in a container with a tight lid (such as a jar) and set aside.
2.
Cut avocados into halves, remove pit, and peel each half carefully.
3.
Slice each avocado half into 4 wedges and wrap a prosciutto strip around each in the center.
4.
Shake the dressing if the ingredients have settled and test for flavor-adjust seasonings if needed (although prosciutto is often very salty- be careful not to add salt unless you really like things very salty).
5.
Set on a serving platter and drizzle with some of the dressing (as much or as little as desired).
6.
Serve immediately as avocados brown quickly once cut.
