Ingredients

lb lean ground beef

oz penne pasta

cup onion, chopped

oz can diced tomatoes

oz can tomato paste

tsp italian seasoning

cup water

tsp oregano
1/8
tsp pepper

cups cottage cheese (low fat)
1/2
cup shredded mozzarella cheese (part-skim)
2
tbsp grated Parmesan cheese (reduced fat)
Directions
1.
Cook penne pasta according to directions on box. In a large skillet brown the ground beef and onion on medium-high heat, drain. Add tomatoes, tomato paste, water, oregano, and pepper. Bring to a boil, reduce heat and let simmer for 5 minutes. In a small bowl combine cottage cheese and Italian seasoning. Spray a 9x13 inch pan with cooking spray. Put 1 cup meat sauce into the pan. Cover sauce with pasta. Spread meat sauce on cottage cheese mixture. Top with mozzarella cheese and then sprinkle with Parmesan cheese. Bake at 350 degrees for 30 minutes.
