Ingredients

cups water

cup uncooked couscous

cup coarsely shredded zucchini
1/2
cup coarsely shredded carrot
1/4
cup thinly sliced scallions
2
tbsp raisins
1/4
cup lemon juice
2
tbsp light olive oil
1/2
tsp salt
1/2
tsp pepper
Directions
1.
Bring water to boil in a medium sacepan; stir in couscous Remove from heat and let stand, covered, 5 minutes, fluff with fork and chill.
2.
Add zucchini and next 3 ingredients to chilled couscous. Combine lemon juice and next 3 ingredients, stir with a whisk until blended Add to couscous mixture, toss well. Cover and chill.
3.
Yield 6-8 servings, about 100 calories per 1/2 cup
