Breaded Fried Chicken Cutlet

your favorite chicken for dinner

Ingredients
1
lb boneless skinless chicken breasts
italian seasoned dry breadcrumbs
eggs
canola or vegetable oil
Directions
1.
take a very sharp knife and split each breast in half to make two thin cut lets out of each breast half.
2.
pound the cutlets to make them uniform in thickness if needed
3.
in a large frying pan put about 1/4' to 1/2' inch of oil turn heat on medium low
4.
beat eggs
5.
dredge each piece in the eggs then the dry breadcrumbs
6.
place in hot oil leave space all around each cutlet in the pan
7.
increase heat if needed. cook till browned on one side then flip over.
8.
cooking time will vary with the thickness of the cutlet.
9.
heat may need to be turned down the longer you cook because the oil holds the heat.
10.
if the bread crumbs begin to burn quickly turn the heat down
11.
press the to of the cutlet to check for doneness
12.
it's done when it feels firm and the flesh is no longer pink
