Potato Soup

Ingredients
8-10
potatoes
3-4
leeks
2
large onions
1
can chicken or veggie broth
2
cans evaporated milk
3
tbsp butter or margarine
whole or skim milk
salt & pepper
fresh parsley or dill
Directions
1.
Peel and cube potatoes, chop onions and slice leeks (use white part only). Saute leeks and onions in butter until tender. Add potatoes, broth and small amount of water and cook until potatoes are tender. Mash potatoes with potato masher. Add evaporated milk, salt, pepper and parsley or dill. If too thick, add some milk until it's the right consistency.
