Artichoke & White Bean Soup

Ingredients
1
medium onion, chopped
1
can artichoke hearts, chopped
1
clove garlic, minced
1
can (15 oz) cannelloni beans, rinsed and drained
2
cups vegetable broth
juice from half a lemon
1/4
tsp dried thyme
salt & pepper
Directions
1.
In a large pot, spray with cooking spray (or in a small amount of broth), saute onion for about 3 minutes. Add the artichoke hearts and garlic and cook for another 5 minutes. Add the broth and the beans, simmer for about 5 minutes or until beans are heated through.
2.
Transfer to a food processor (or use hand-held blender) and puree.
3.
Return to pot, add lemon juice and seasonings and heat through.
