Lemon Syrup Cake

Ingredients

gr butter

tbsp grated lemon rind
1
cup castor sugar

eggs separated
2
cups self-raising flour
1
cup buttermilk
LEMON SYRUP
1/3
cup lemon juice
3/4
cup sugar
1/4
cup water
Directions
1.
Grease and lightly flour a baking pan, shake out the excess flour
2.
Cream butter, rind and sugar in a bowl with electric mixer until light and fluffy, beat in egg yolks one at a time and beat until combined.
3.
Transfer the mixture into a large bowl, stir in half the buttermilk, then stir in remaining flour and buttermilk.
4.
Beat egg whites in a small bowl until soft peaks form, fold lightly into mixture in 2 batches.
5.
Spread the mixture into prepared pan. Bake in moderate oven for about one hour. Stand 5 minutes before turning onto cooling rack. Pour hot lemon syrup evenly through hot cake.
