Chris's Spaghetti & Meatballs

Ingredients
1
kg grass fed beef mince
1/2
red capsicum
4
stems shallots
1
carrot
2
tbsp Garlic
1/2
cup uncooked rice
Salt
Italian herbs
1
large tin Big Red tomato soup
Half tin of water
Directions
1.
Blend vegetables in food processor with a little bit of the tomato soup. Mix in with mince, herbs, spices and uncooked rice.
2.
Roll into meatballs, place in saucepan with big red soup mix and water, bring to boil. Reduce heat to simmer until cooked through and serve over spaghetti.
3.
Note: meat will tenderise best if you simmer in sauce for longer, similar to the bolognese reduction.
