Curried Rice Salad

Ingredients

cups cold cooked brown rice
3/4
cup golden raisins
1/2
cup chopped almonds, toasted
3
tbsp chopped fresh cilantro
honey-curry dressing
2
tbsp lemon juice
2
cloves garlic, crushed
2
tsp curry powder
1/4
tsp ground cumin
1/2
tsp ground turmeric
1/4
tsp ground ginger
1
tbsp honey
4
tbsp olive oil, grapeseed or safflower oil
1
tbsp toasted sesame oil
Directions
1.
Whisk dressing ingredients together (or place in a jar and shake until combined).
2.
Place rice, raisins, almonds, and cilantro in large bowl.
3.
Mix in salad dressing. Toss until coated.
4.
Chill at least one hour before serving.
