Cucumber Salad

Serves 4people
Ingredients
cucumbers, peeled and sliced thin
onions or chives, thinly sliced
pepper
salt
cider vinegar
sugar
Directions
1.
Into a bowl, slice cucumbers very thin and lightly salt.
2.
Put a weight on top. Let sit for about an hour. Strain off liquid and squeeze out all the juice.
3.
In a separate bowl, mix equal parts sugar and cider vinegar together. Use your fingers so the heat of your hands will dissolve the sugar.
4.
Add cucumber to vinegar mixture along with either thinly sliced onion or chives.
5.
Season with pepper and more salt if necessary.
6.
Chill.
