Roasted Eggplant Salad

Ingredients
1
large eggplant, peeled and sliced
1
cup yellow pepper, julienned
1
cup red pepper, julienned
1
cup cherry tomatoes, halved
1/4
cup white wine vinegar
1/4
cup sliced black olives
1
tsp dried basil or 2 Tb fresh
1
tsp oregano
1
tbsp minced green onion
1
tbsp sugar
1
tbsp olive oil
1/4
cup vegetable broth
Directions
1.
Coat skillet with vegetable oil spray and brown eggplant. Remove. Brown peppers, cool.
2.
Combine in a jar with lid: vinegar, broth, green onion, sugar, olive oil, and seasonings. Shake well.
3.
Arrange eggplant, peppers and tomatoes on a lettuce lined platter. Top with black olives.
4.
Pour dressing over and chill.
