Potato Bacon Frittata

Ingredients

oz bacon, diced
2-3
large potatoes, cubed
1/2
cup onion, chopped
1/4
cup green pepper, diced
2
tbsp margarine
1 1/2
cups shredded Swiss cheese
1/4
cup fresh parsley, chopped
salt & pepper
6
eggs
1
cup milk
1/3
cup Bisquick
Directions
1.
Grease a 9x9 baking pan or large quiche dish.
2.
In skillet cook bacon. Remove and drain. Pour off bacon grease.
3.
Cook onion, pepper and potatoes until tender. Stir in bacon.
4.
Beat together eggs, cheese, milk, Bisquick, margarine and seasonings.
5.
Pour into baking dish and spoon in potato mixture.
6.
Bake at 375 for 30 minutes or until set.
