Welsh Rarebit

Ingredients

tbsp butter
1
tsp flour
1/4
tsp dry mustard
1
cup milk
1 1/4
cups shredded cheddar
saltines or toast

egg, separated
Directions

Melt 1 Tb butter, add 1 t flour and 1/4 t dry mustard. Stir well. Add 1 cup milk and stir until smooth. Add 1 1/4 cup shredded cheddar.

Remove about 1/2 cup of the mixture and put in a small

bowl. To this beat in one egg yolk. Return to mixture in pan.

Beat one egg white until stiff. Fold into cheese mixture.
5.
Serve over saltines or toast.
