Pasta With Shrimp And Mushrooms

Ingredients
3/4
lb medium shrimp
1/4
lb mushrooms
1
bunch scallions
1/2
lb spaghetti
1
egg
1/2
cup half & half
1/2
cup Parmesan cheese
1/4
cup chopped fresh parsley
4
tsp anchovy paste
1/2
dry mustard
1/4
tsp pepper
3
tbsp olive oil
2-3
cloves garlic, minced
Directions
1.
Shell and devein shrimp.

Slice mushrooms. Coarsely chop scallions.
3.
Beat egg. Add half and half, Parmesan cheese, parsley, anchovy, mustard and pepper. Mix well.
4.
Saute mushrooms and garlic in olive oil about 5 minutes. Add the shrimp and scallions. Cook until shrimp turns pink, about 2 minutes. Cook pasta and drain. Return to pot. Toss with shrimp mixture and egg mixture. Keep on low heat until egg mixture is thoroughly cooked.
5.
Serve with more Parmesan cheese.
