Ginny Lynch's Apricot Squares

My best friend makes the yummiest Apricot Squares. I got her to share the recipe. Submitted by Aunt Lorinne

Ingredients

cup butter, softened
1
cup sugar
1
egg
1
tsp lemon extract
3
cups all purpose flour
4
tsp grated orange peel (this also is sold in a jar in the spice area of supermarket)
1
tsp baking powder
1/4
tsp salt
Filling:
1
jar (18oz) apricot preserves
2
tsp lemon juice
1
tsp grated lemon peel
Directions
1.
In mixing bowl cream butter and sugar
2.
Add egg and extract and mix well
3.
Combine flour, orange peel, baking powder and salt
4.
Gradually add to creamed mixture
5.
Set aside 1/3 for the topping
6.
Press remaining dough into greased 13x9x2" baking pan
7.
Combine preserves, lemon juice and peel and spread evenly over crust
8.
Crumble reserved dough over filling
9.
Bake 350 for 40 minutes or until golden brown
