Sherri's Scottish Shortbread

Ingredients

gr Butter
3
cups plain flour
1/2
cup castor sugar
Directions
1.
Use a food processor to cream the butter until it resembles whipped cream, gradually adding the sugar, beating until it is light and fluffy.
2.
Gradually work in the flour (about a cup at a time) and then knead the dough for roughly 15 minutes until the mixture is smooth.
3.
Place the mixture into a lamington tin and press out with the heel of your palm to smooth out the surface. Prick the surface with a fork and bake in the centre of a moderate oven (180 degrees) for 20 minutes. Reduce the temperature to 150 degrees and bake for a further 40 minutes.
4.
Slice up and enjoy! (You can also add icing sugar over the top for an extra sweetness)
