Red Pepper Soup

This Red Pepper Soup Recipe was and still is popular among the Verkaik's during the Holiday season.

Ingredients

tbsp Butter
2
Medium Onions, diced
3
Garlic Cloves, minced
4
Large Sweet Red Peppers, sliced & seeded
3
cups Chicken Broth
1
Bay Leaf
1/4
cup Butter
1/4
cup Flour
1/2
cup Whipping Cream
6
tbsp Sour Cream
4
tbsp Chives, chopped
Directions
1.
Sautè onion and garlic in 2 Tbs butter for 2 minutes.
2.
Add peppers and sautè for an additional 2 minutes without browning.
3.
Add chicken broth and bay lea. Cover and simmer for 30 minutes.
4.
Remove bay leaf and check the seasonings.
5.
Mix the 1/4 cup butter with the flour to form a beurre maniè and add to soup a little bit at a time, stirring constantly.
6.
Cook for about 5 minutes or until thickened.
7.
Cool
8.
Puree in a blender or a food processor; sieve to remove skins.
9.
Warm over stove, careful not to bring to a full boil.
10.
Add cream and garnish with a dollop of sour cream and a sprinkle of chives.
