Mushroom Scallion Soup

Ingredients
1/2
cup Butter
5
Bunches Scallions or Green Onions
1
tsp Salt
1
tsp White Pepper
5
cups Chicken Stock
1
lb Mushrooms, thinly sliced
1 1/4
cups Cream
4
tbsp Whipping Cream, whipped
1
dash Cayenne Pepper
Directions
1.
Melt butter in large saucepan. Add onions, salt and pepper. Sautè for 10 minutes.
2.
Add stock and bring to a boil. Cover and simmer for 10 minutes. Add half of the mushrooms and soak for one minute.
3.
Purèe in blender or food processor until smooth.
4.
*The soup may be frozen at this point.
5.
Add cream and heat.
6.
Drop in remaining mushrooms and cook slowly until tender.
7.
Serve with a dollop of whipped cream and a sprinkle of cayenne pepper.
