Chura Mattar: A Banarasi 'Street Food' Snack!

So the Agarwal family loves their SNACKS…here is special snack recipe that is a classic from my mom’s hometown of Banaras. This is a HEALTHY VERSION of the dish.

lb frozen peas (according to Tinu, she is still searching, 40+ years later, for nice fresh peas in an Amercian market)

cups cup dry chura flakes (plain, flat rice flakes) (also known as poha)

medium fresh tomato
1/4
cup fresh duniya
1
fresh green chilis
1
tbsp diced fresh ginger

tbsp of vegetable oil
1/2
lemon (fresh)
1/2
cup warm water (from tap)
spices
o 3 teaspoons duniya powder
o 2 1/2 teaspoons salt
o 1/2 teaspoon cumin seeds
o 1/2 teaspoon haldi powder
o 1 pinch hing powder
o 3 or 4 bay leaves
o 3 or 4 large cardamom seeds
Directions
1.
Warm oil in 2 quart pan

Add cumin and hing – mix well with oil and make it brown
3.
Stir in ginger, bay leaves, green chilis and cardamom – mix well
4.
Stir in duniya powder, haldi
5.
Stir in peas
6.
Stir in ½ amount of the fresh duniya leaves

Add in ½ cup warm water and let peas cook in spice mixture ; fine to let peas stay a just a little hard (don’t make them too soft or mushy)

When peas cooked, put aside

In a separate pan, add tomato to boiling water / let tomato fully cook

Remove pulp, skin and seeds with strainer – Keep the tomato water for recipe
11.
Fill large pot with room temperature water
12.
Put chivara in strainer and dip it in the pot with water – the goal is to dampen/moisten chivara throughout, but do not make it too wet (and do not pour water over chivara!)

Add chivara to cooked peas

Add tomato water in small increments (do not want dish to get too liquidy)

Add salt to taste

Now you are ready to serve:

- Add rest of fresh duniya as garnish
18.
- Mix in fresh lemon juice [or as an alternative, serve with fresh green duniya chutney]
19.
- Serve dish at room temperature

Tastes great with a warm cup of tea!!
