Sardine Cakes With Coconut Aminos

Canned sardines are packed full of omega-3's, calcium, protein, low in mercury. I recommend Wild Planet's canned sardines in olive oil.

Ingredients

cans sardines
1/2
cup parsley, chopped
1
clove garlic, chopped
1/2
cup cucumber, chopped
1/2
cup GF bread or crackers crumbs
2
eggs
1/2
lemon
1/2
tsp salt
1
tbsp capers (optional)
2
tbsp parmesan cheese, grated (optional)
1
tbsp coconut or avocado oil
Greens (e.g., arugula, lettuce, spinach)
1
tbsp Coconut Aminos (more for taste)
1
tbsp Siracha sauce (optional)
1
avocado, sliced (optional)
Directions
1.
Heat oil in skillet on medium heat
2.
Mix all ingredients except greens and coconut aminos
3.
Scoop mix onto skillet to make round ~4" cakes. Press down mixture with spatula
4.
Cook for 3 minutes per side, flipping once
5.
Plate greens and serve sardine cake on top
6.
Drizzle sardine cake with coconut aminos, Siracha, and squeeze of lemon
7.
Top with avocado slices and serve!
