Ingredients
2
cups uncooked kidney beans (good brand - "Swad"...get at your Indian grocery store)
2
regular size onions
2
regular size tomatoes
1
head of garlic
1
potato
basmati rice
whatever cooking oil you like to use
lemon juice
salt
chilis (ground red hot chili peppers)
dhania powder (ground coriander)
haldi (turmeric)
kala namak (black salt)
raw ginger
Directions

RAJMA (makes 8-10 servings)

Using a slow cooker*...soften 2 cups of kidney beans. (Length of time for this: if you put it on right before you go to bed, it'll be done by morning. If you put it on before work, it'll be done by the end of the day when you get home. It won't get "overcooked" if it's on low heat for these lengths of time - just make sure you put enough water in there.)

*You can use a pressure cooker instead of a slow cooker to soften the beans more quickly...at your own risk. A pressure cooker blew up an inch from my face at age 22 so naturally I think these are just devil-made scary machines.

Alright so when those beans are done, you can start the rest of the process. Chop two regular size onions, two regular size tomatoes, about 5-6 garlic cloves and one regular size potato.

In a big 3 quart pot, add cooking oil and just when that oil is hot add the chopped onions. Let them brown, make sure they don't burn. Then add the chopped tomatoes. Let these two become a pasty mixture. After it becomes a pasty mixture add 2-3 tsp salt, 2-3 tsp ground red chili peppers, 3-3.5 tsp dhania powder (ground coriander) and a pinch of haldi (turmeric) (less than 1/4 tsp). Mix everything.

Add the kidney beans and all the water that it's been soaking in to this paste just made in the 3 quart pot. Mix it all together. Then add the chopped garlic cloves and chopped potato. Let it cook until the potatoes are soft. Feel free to add more salt and chilis as per your desired taste.

Shred a small amount of ginger (less than a teaspoon's worth of shredded ginger) and add in to the kidney beans at the end for added flavor.

When it's finally all finished, add about 2-3 tsp lemon juice. Serve with a bit of cilantra spread on top if you want it to look decorative!
9.
Serve with rice, chutney and raita.
