Homemade Healthy Granola

Ingredients
2
cups rolled oats (not instant)
1/2
cup sliced or slivered almonds
1/4
cup raw seed (sunflower or pumpkin work well)
2
tbsp virgin coconut oil
2
tbsp honey
1/2
tsp vanilla or almond extract
Directions
1.
Preheat the oven to 325º F. Combine all ingredients in a mixing bowl and use your clean hands to mix well and toss to coat.
2.
The coconut oil will be solid but your hands will warm it up and melt it into the mixture, just be sure to mix it all through the other ingredients so there aren’t any chunks of oil left.
3.
Spread the mixture in a thin layer on a baking sheet and bake for about 20 minutes, until lightly toasted. Cool before serving or storing.
4.
This granola can be kept in an airtight container in a cool, dry place for up to 2 weeks.
