Mediterranean Spring Salad

Ingredients

asparagus spears—ends cut off and halved

green beans—halved

small carrot—peeled and sliced into thin rounds

(2 cup) cherry tomatoes—halved
1/2
yellow pepper —cut into thin strips
1/2
zucchini—halved lengthwise and thinly sliced into half moons

tbsp extra virgin olive oil

(2 tbsp) lemon juice

tbsp finely chopped fresh basil

clove garlic—minced
1/4
tsp salt
1/4
tsp freshly ground black pepper
Directions
1.
Bring a pot of water to the boil. Add the asparagus and green beans and cook for 3 minutes.
2.
Refresh under cold water, drain, and place the asparagus and green beans in a salad bowl. Add the carrot, cherry tomatoes, yellow pepper and zucchini.
3.
Combine the olive oil, lemon juice, basil, garlic, salt and pepper in a screw-top jar and shake well to combine.
4.
Toss the salad ingredients gently with the dressing.
5.
Variations: Add a handful of toasted pine nuts or walnuts. Add some crumbled feta cheese. Add some chopped chicken. Add some hard-boiled egg.
