Pankaj Chutney & Raita

Ingredients
2
bunches of cilantro (3 bunches if you want to make a lot of chutney)
1
large container plain yogurt
1
cucumber
lemon juice
chilis (ground red hot chili peppers)
kala namak (black salt)
regular salt

To make spicy garlic-y chutney....grind two bunches of cilantro leaves in a blender. Add 1 tsp ground chili peppers, 2-4 cloves of chopped up garlic (depends how garlic-y you want it...perhaps start with a smaller amount and add more if you feel like it), 1 tsp salt and continue to blend. Add a couple squirts of lemon juice (1- 2 tsp). Taste it and add whatever you want more of - need it hotter or saltier? Add little amounts of each to taste.

To make raita, shred one cucumber. Add 3/4 of a regular size container of yogurt (I use organic plain yogurt). Add 1/2-1 tsp of kala namak and 1/2-1 tsp of crushed chili peppers. Chilis obviously not necessary (but don't skip out on the kala namak!) Add more chilis and kala namak to taste.
