Pankaj Aloo Baingan Subzi

Ingredients
6
baby eggplants, cut into medium-size cubes
2
small potatoes, cut into medium-size cubes
2
large cloves of garlic, minced
2
tbsp of vegetable oil
1
tbsp of coriander seeds
3
coriander powder
2
chili powder
1/2
tsp tumeric powder
2
salt
1
tsp mango (amchoor) powder
Directions
1.
Heat oil in a medium-sized cooking pan.
2.
Add garlic and coriander seeds and sautee for a minute or two until the garlic has turned a bit golden (do not let brown).
3.
Add eggplant and potatoes and sautee over medium heat for a couple of minutes.
4.
Add the coriander powder, chili, tumeric, and salt and mix well.
5.
Cover the pan and lower heat. Cook at the lower heat for about 20-25 minutes or until the potatoes are tender.
6.
When you think the dish almost looks done, add the amchoor powder and mix gently.
7.
This subzi tastes great with fresh rotis. Eat with chutney and raita as well for added spice and flavor!
