Falafel

Great alone or on a salad!

Ingredients

can Chickpeas
1/2
onion, chopped
2
cloves garlic
5
sun dried tomatoes
1/2
bunch of parsley
1
tsp ground cumin
1
tsp ground corriander
1
tsp sea salt
1/2
cup chickpea flour
2
tbsp EVOO
Directions
1.
Place all the ingredients in a food processor and blend until smooth, but chunky.
2.
Scoop 1/4 cup of the falafel mix to fry in a pan.
3.
Cook until both sides are crispy and brown.
