Cauliflower And Kale Saute

Ingredients

tbsp olive oil
1
garlic clove, minced or pressed
1/4
medium yellow onion, cut into thin slices
1
small head of cauliflower, about 6 cups, cut into very small florets
1
can organic, no salt added pinto beans, drained and rinsed
2
cup kale, washed and chopped into small pieces or shreds (about 1 bunch or 4 ounces)
1
lemon zested and juiced *keep zest and juice separate
1
tsp Herbes de Provence
1
tsp paprika
1
tsp kosher salt
pinch of black pepper
Directions
1.
Heat a large sauté pan over medium heat and add in the oil, garlic and onion: sauté for 1 minute.
2.
Add cauliflower, beans, kale, lemon zest, Herbes, paprika, and salt & pepper.
3.
Stir to combine and cook for 10 minutes or until the cauliflower is tender.
4.
Squeeze lemon juice over the top and serve warm.
