Sarla Aunty's Eggplant

One of Mom's staples. Quick, tasty and delicious!

Ingredients
1
full eggplant
1
tsp tsp of grated ginger
1
clove clove of grated or cut up garlic
1
large tomato, diced
2
tbsp of vegetable oil
1
tsp of cumin seed
3/4
of salt
3/4
of coriander/coriander powder
3/4
of turmeric powder
Directions
1.
Cut up one full eggplant into small cubes
2.
Put 2 tablespoons of vegetable oil in a pot and put on the stove
3.
Add 1tsp of cumin seed
4.
After 1 to 2 mts when cumin aroma emerges, add the eggplant in to the pot
5.
Mix it up
6.
Add about 3/4 tsp of salt, 3/4 tsp of coriander/coriander powder, 3/4 tsp of turmeric powder, I tsp of grated ginger, I clove of grated or cut up garlic.
7.
Cook until tender
8.
Add 1 cut/diced tomato
9.
Cook for about 7 to 10 more minutes
10.
Garnish with cut up fresh cilantro and serve hot with rice or bread or chapati or parantha
11.
Serve with love
