Creamy Tomato Basil Soup By: Mara Coplowitz

Serves 6people
Ingredients
1
large & 1 medium onion
5
cloves of garlic
3
6 sprigs of basil tied with string
4
cups of vegetable stock
4
lb canned tomatoes
1
cup non-dairy creamer
2
balsamic vinegar
loose basil leaves
salt and pepper to taste
Directions
1.
Sautee onions and garlic in oil until soft.
2.
Add sprigs of basil, vegetable broth, tomatoes (with juice from can), salt and pepper to taste. Bring to boil (medium to medium high heat). Once boiling, lower heat to simmer (between low and medium low) for 20 minutes.
3.
Remove basil sprigs, puree, add creamer and balsamic vinegar.
4.
Add additional salt and pepper to taste if necessary.
5.
Chop loose basil leaves and sprinkle on individual bowls of soup when served.
