Corn Flake Crumb Chicken By: Barbara Coplowitz

For 2 lb. Chicken Cutlets!

Ingredients

cups corn flake crumbs

tsp salt
1
/8-1/4 tsp black pepper (i don’t measure this)
1
tbsp onion powder
1
tbsp garlic powder
1
tbsp paprika
1
tbsp parsley flakes
dash cayenne pepper (more if you like it hot)
Directions
1.
Preheat oven to 350 degrees.

Mix all dry ingredients together.
3.
Dip chicken in light olive oil or canola oil. Then dip into crumb mixture. Place in baking dish, may need two 9x12 pans. I use one 9x12 and one 8x8 for about 10 cutlets. Don’t grease pan. Drizzle cutlets with honey. Bake for 35-45 minutes depending on thickness of cutlets.

Can adapt for 2 whole cutup chickens. Will need 3 cups of crumbs. Add 3 tsp salt, add a little more pepper and cayenne. Add an extra ½ tbsp. of all the other ingredients. Will need to bake for an hour.
