Ingredients
6
large potatoes (or 8 medium size), peeled
2
onions (large)
4
large eggs, lightly beaten
5
tbsp canola oil
2
tsp salt
pepper to taste (about 1/8 tsp-1/4 tsp)
1/4
cup potato starch
1
cup boiling water
1/4
cup canola oil
Directions
1.
Preheat oven to 500 degrees.
2.
Chop onions by pulsing in food processor and place in large bowl. They should be fairly watery.
3.
Chop potatoes by pulsing in food processor, 2-3 potatoes at a time until fairly well grated (slightly watery).
4.
Add potatoes to onions, then stir in eggs, 5 tbsp. oil, salt, and pepper.
5.
Sprinkle potato starch on top and pour boiling water over starch, stir thoroughly.
6.
Pour ¼ cup oil into 13 x 9 inch baking pan (preferably glass pyrex) and place in oven for 1-2 minutes until hot, do not let burn!!
7.
Remove pan from oven and carefully pour potato mixture into pan.
8.
Bake 20 min, then reduce heat to 400 degrees and bake 40 more minutes until deep golden brown.
